I don t have any coielings but i have already tried replacing them and the two roofs either side above the bay windows don t go through either even though those rooms don t have a ceiling.

First place one roof as shown below and then use the copy room tool for that roof and place the other roof so that the roofs form a cross. Even with the octagonal roof while it aligns better with walls since you can draw them at those angles the angles are still slightly off leaving in the case where you want to cover an octagonal room with an octagonal roof uncovered portions of the structure.
